Walleye is a South Dakota tradition, we love this fast and easy dish paired with Firehouse Chardonnay.
Prep time: 15 Minutes
- 2 Walleye fillets skin removed (you could also use tilapia)
- 2 teaspoons of minced garlic
- 1/4 cup olive oil
- 5 tablespoons butter
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon of black pepper
- 1/2 cup of Firehouse Chardonnay
- 1/2 pound Fettuccine noodles
- 1/2 cup of grated parmesan cheese
- 1 cup of mushrooms
- Bring a large pot of water to a boil and prepare pasta noodles al dente
- In a large saucepan, heat olive oil over medium heat. Add red pepper and garlic – sautée until golden and fragrant
- Add wine, salt and butter and stir for about two minutes
- Remove from heat
- Take two tablespoons of butter wine mixture and add to a pan.
- Add fish and mushrooms then cover.
- After 10 minutes flip the fish and cook for another 2 minutes or until golden brown
- Toss noodles in remaining butter sauce, top with fish, mushrooms and Parmesan cheese
- Pair with remaining Firehouse Chardonnay
